This steamed white rice with saffron, also known as Chelo, is a popular dish in Iran. Chelo is usually paired with the classic meat kebab, and they make up the perfect iftar during Ramadan.

Steamed Persian Rice

1 cup Basmati rice
2 cups water
2 tablespoons vegetable oil
1/2 teaspoon salt
Saffron threads (optional)

  1. Rinse the rice

    Rinse the rice under cold water until the water runs clear. Carefully drain the water.
  2. Boil the rice

    In a pot, bring 2 cups of water to a boil. Add the soaked and drained rice to the boiling water and let it simmer on medium-low for 10 minutes. Drain in a colander.
  3. Create a saffron mixture (optional)

    Soak a pinch of saffron threads in 2 tablespoons of warm water.
  4. Layer the rice in the pot

    In the same pot, heat the oil. Add the saffron mixture to the oil for a golden color (optional), then layer the partially cooked rice gradually and evenly in the pot.
  5. Steam the rice

    Wrap the pot lid with a clean kitchen towel, and place the lid on the pot, reducing the heat to the lowest setting. Let it steam for 20-25 minutes.
  6. Serve

    Once done, use a fork to fluff the rice gently, and serve it on a platter.
