Carrot Rice
1 onion
3 medium carrots grated (about 1.5 cups packed) *see notes
1 tomato
4 tablespoons vegetable oil
2 cinnamon sticks
½ teaspoon ground cinnamon
¼ teaspoon black pepper
1 and ¼ teaspoon salt
1 chicken bouillon cube substitute for vegetable for a vegetarian option
1 and ½ cups basmati rice
2 and ¼ cups water

  1. Chop

    Begin by finely chopping the onions and tomatoes, and grating the carrots (excluding the green parts)
  2. Heat

    Heat some vegetable oil in a non-stick pot over medium heat and sauté the onions until softened
  3. Add Tomatoes

    Add the chopped tomatoes to the pot and continue to cook for a few more minutes
  4. Mix and Stir

    Mix in the grated carrots, bouillon cube, salt, pepper, cinnamon sticks, and ground cinnamon. Stir and cook for five minutes, stirring occasionally
  5. Rinse and Drain

    Rinse and drain the basmati rice and add it to the pot. Stir and cook for two minutes
  6. Add Water and Lower the Heat

    Add water to the pot and wait for the mixture to start boiling. Once boiling, lower the heat, cover the pot, and let it cook on low heat for 20 minutes without opening the lid.
  7. Remove and Serve

    After 20 minutes, remove the lid and fluff the rice with a fork. Serve and enjoy!
