Green Shakshuka

¼ cup olive oil
1 large chopped onion
1 chopped green onion
3 minced garlic cloves
2 cups baby spinach
1 green bell pepper
1 grated zucchini
1 teaspoon coriander
½ teaspoon red pepper flakes
¾ teaspoon cumin
Juice of ½ lemon
4 large eggs
Salt and black pepper, to taste
Fresh cilantro and fresh parsley for garnish

  1. Make the shakshuka green sauce

    Heat olive oil in a large sauté pan over medium heat, add the chopped bell pepper, onion, green onion, salt, black pepper, cumin, coriander, and pepper flakes and cook for about 5 minutes until the onion becomes translucent, then add the garlic, zucchini and stir for 5 minute, and add the baby spinach and stir until it just starts to wilt, then turn the heat to low.
  2. Add the eggs

    Use a spoon to make holes in the sauce and crack the eggs into each one, then cover the pan and cook over medium-low heat for 5-8 minutes until the eggs are done.
  3. Serve

    Once the eggs are ready, garnish with parsley, and cilantro, then serve immediately while it is still hot.
