This Kuku sabzi recipe is a Persian baked omelet with a twist on the traditional via the addition of potatoes to soften the intensity of the herbs.

Kuku Sabzi

1 large potato
1 small brown onion - grated
250g chopped garlic chives
65g chopped coriander
35g chopped parsley
4 garlic cloves
4 eggs
2 tsp ground turmeric
125ml olive oil
salt to taste

  1. Cook the potato

    Grate the potato, then put it in a pan, cover it with cold water, and season well with salt. Bring to a boil over high heat, then reduce to a simmer and cook the potato until soft.
  2. Mix all the ingredients

    In a large bowl, add the cooked potato, and onion, along with the herbs, garlic, egg, turmeric, and salt. mix well.
  3. Cook the kuku sabzi

    Heat the olive oil in a frying pan over low heat, add the mixture, then cover with a lid and cook for 10 mins. Carefully flip it, uncooked side down, and cook it a further 10 mins until golden.
  4. Serve

    Slice the kuku sabzi like a pizza and enjoy hot or cold.
