Ramadan Recipes: Nigerian Egg Roll

This Nigerian snack features a boiled egg wrapped in a mass of flour dough and deep-fried to form a ball-like shape.

Nigerian Egg Roll
2 cups flour
1 tsp baking powder
1/4 tsp salt
2 tbsp sugar
1/2 tsp nutmeg
2 tbsp margarine
1 egg - beaten
8-9 tbsp water
5 eggs - boiled

  1. Mix the dry ingredients

    In a large bowl, mix the flour, baking powder, salt, sugar, nutmeg, and margarine. Blend the margarine into the flour until crumbly.
  2. Add the liquid ingredients

    Stir in the beaten egg, then add the water a little at a time and work the dough till the dough is soft and sticky. Work the dough for a minute, then cover it and let it rest for about 15-20 minutes.
  3. Divide the dough

    After it rests, work the dough again for a minute and divide it into five balls.
  4. Shape the egg rolls

    Flatten out each ball of dough, drop the egg in the middle, and tightly wrap the dough around each egg.
  5. Fry the egg rolls

    Fry on medium heat until golden brown about 6-8 minutes until golden in color.
  6. Serve

    Serve with cold juice at brunch or tea for breakfast.
