Omani Halwa

1 cup cornstarch
1 ½ cups sugar
4 cups water
1 cup ghee (clarified butter)
1 tablespoon ground cardamom
1 tablespoon rose water
1 tablespoon saffron threads
1 cup mixed nuts (such as almonds, cashews, and pistachios), chopped

  1. Prepare the Sugar Syrup

    In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is completely dissolved. Let the syrup simmer for about 5 minutes until slightly thickened. Set aside to cool.
  2. Mix Cornstarch and Water

    In a separate bowl, mix the cornstarch with water to form a smooth paste. Set aside.
  3. Heat Ghee

    In a large pot or skillet, heat the ghee over medium heat until melted.
  4. Add Sugar Syrup and Cornstarch Mixture

    Gradually pour the prepared sugar syrup into the melted ghee while stirring continuously. Then, gradually add the cornstarch mixture, stirring continuously to prevent lumps from forming. Cook the mixture for about 10-15 minutes, stirring constantly, until it thickens and turns golden brown.
  5. Add Flavorings

    Once the mixture thickens, add the ground cardamom, rose water, and saffron threads. Stir well to incorporate the flavors into the halwa mixture.
  6. Garnish and Serve

    Remove the halwa from the heat and transfer it to a serving dish. Sprinkle the chopped mixed nuts over the top for added texture and flavor. Allow the halwa to cool and set for about 1-2 hours before serving.
