Paneer tikka is a popular Indian starter during Ramadan where the paneer cubes and veggies are marinated in yogurt and aromatic spices and then grilled.

Paneer Tikka Marination

1 cup thick yogurt
1 tablespoon ginger garlic paste
1 teaspoon roasted cumin powder
1½ teaspoon coriander powder
1 teaspoon chat masala
1 teaspoon Garam masala or tandoori masala
1 teaspoon kasuri methi or dried fenugreek leaves
2 tablespoons Kashmiri red chile powder
2 tablespoons gram flour
½ teaspoon salt

Paneer Tikka

1 onion - cut into cubes
1 capsicum - cut into cubes
200 grams Paneer - cut into cubes
1 tablespoon melted butter
Juice of half lemon
Chat masala
Cilantro or coriander leaves

  1. Prepare the Paneer Tikka marination

    In a bowl, mix the marination ingredients nicely to form a smooth paste. You can drizzle a teaspoon of lemon juice if needed.
  2. Toss veggies and paneer in the marinade

    Add the cubed capsicum, onion, and paneer to the marinade, toss until each piece is well covered, and let this marinate for at least 15 minutes.
  3. Arrange veggies and paneer on skewers

    Soak the wooden skewers for 15 to 30 minutes in water. This will reduce any burning of the skewers. Now arrange the paneer and veggies on the skewers by alternating them.
  4. Bake

    Preheat the oven to 480 degrees F, arrange all the skewers, brush them with some melted butter so that they remain moist, then bake them on the pan for about 4-5 minutes on each side.
