Phirni

1/4 cup basmati rice
4 cups full-fat milk
1/2 cup sugar
1/4 teaspoon cardamom powder
A pinch of saffron strands
2 tablespoons chopped nuts (almonds, pistachios)
1 tablespoon rose water

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and grind it into a coarse powder using a blender or food processor.
  2. Cook Rice Paste

    In a heavy-bottomed pan, heat the milk over medium heat until it comes to a boil. Gradually add the ground rice paste to the boiling milk, stirring continuously to prevent lumps from forming.
  3. Simmer and Thicken

    Lower the heat to medium-low and continue to cook the rice mixture, stirring frequently, until it thickens to a pudding-like consistency. This should take about 15-20 minutes.
  4. Sweeten and Flavor

    Once the rice pudding has thickened, add sugar, cardamom powder, and saffron strands. Stir well to dissolve the sugar and infuse the flavors into the Phirni.
  5. Add Nuts and Rose Water

    Stir in the chopped nuts and rose water, reserving some nuts for garnish. Cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Chill and Serve
