Rice Tuwo, or Tuwo Shinkafa, is a Nigerian rice pudding. Once cooked, the rice is mashed and formed into balls. It’s then served alongside soup or stew. It is neither sweet nor savory.

Rice Tuwo

2 cups short-grain rice
4 cups of water
  • Method & Directions

  1. Wash the rice

    Rinse rice with cold water until it runs clear.
  2. Cook the rice

    Place a pot over medium-high heat, and add the rice into a big pan with enough water to cover the rice grains. As the liquid is absorbed, reduce the heat to low.
  3. Add more water

    Add water as you go in small quantities and cook the rice until it is soft and mushy, with a bit of liquid left.
  4. Mash the rice

    Over low heat, use a wooden ladle to mash and fold the rice against the sides of the pot repeatedly until the grains come together to form a stiff dough. Remove from heat.
  5. Roll into balls and serve

    Roll into balls or just scoop with a spoon and serve with your favorite soup. Enjoy!
